Butternuts

Carol Hanken, October 2019

Butternuts? I have a tree that’s about 35+ years old and this is the first time we’ve had more than a dozen or so nuts. Not sure what I need to do with them. The sticky green covering is pretty labor intensive to remove. Do I need to dry the inner nut?

Jesse Stevens. Nice haul, and welcome! Step-stomp gently cudgel to get off the husk. Let them cure and dry out for a few weeks, that will make extracting the nutmeat easier and more flavorful too.

Carol Hanken. Thanks!! One more question (for now anyway 😊) Is it necessary to get the green part off ASAP? Will they rot if I don’t get to them right away?

Jesse Stevens. They will rot and slough off, fine if you are planting them but not so great if you want to eat them as the husk can impart a strong flavor to nut inside.
